Pie

We can’t have pumpkin recipes without pumpkin pie! While you can go for a traditional pumpkin pie, other recipes are worth a try, too. Do some experimenting and see what you like the most!

Breads and muffins

To me, a slice of fresh pumpkin bread is a delectable treat I love! If you’re with me in the love of pumpkin and carbs, you’re definitely going to want to try out some of these pumpkin recipes!

Main course

We often think pumpkin recipes are going to fall into the dessert category, but there are a decent amount of savory pumpkin recipes that you can serve up for dinner this fall.

  • Pumpkin soup: This velvety smooth soup is a great fall dinner combining both soup and pumpkin into one.
  • Pumpkin lasagna roll-ups: By using pumpkin puree instead of tomatoes, this lasagna recipe is IC friendly and worth a try.
  • Pumpkin bacon carbonara: Another yummy Italian dish that uses pumpkin instead of tomatoes for a hearty, IC friendly dish.
  • Pumpkin manicotti with bechamel  sauce: Try this delicious and cheesy Italian entrée that relies on pumpkin instead of tomato.
  • Pumpkin pizza: Make a flatbread pizza with pumpkin and caramelized onions. (Caramelizing the onions removes acidity, so they may be better tolerated by IC bladders. If you haven’t tried them before, proceed with caution. Also be sure to omit the crushed red pepper in this recipe to avoid any trigger foods.)
  • Pumpkin pot pie with sausage and kale: The use of ground pork instead of spicy sausage in this recipe helps keep it IC friendly. It does include cooked onion, which is often easier on IC bladders than raw onion. If you aren’t sure, leave out the onion for this one.
  • Baked pumpkin mac and cheese with bacon: This hearty recipe combines creamy cheese with noodles, pumpkin and bacon.
  • Roasted pumpkin and kale frittata: You can serve this egg dish for breakfast or for dinner. The caramelized onions are often IC friendly, but omit them if they bother you.
  • Pumpkin chicken enchiladas: This is a great option for enchiladas that won’t bother your bladder. Modify the recipe slightly by omitting the chili powder and jalapeno, which are in the “Foods to Avoid” category. Consider omitting the green onions, which are in the “Foods Worth Trying” category.

Cookies and Cakes

Pie isn’t the only dessert that welcomes pumpkin with open arms. These cookies and cake recipes are also delicious ways to enjoy pumpkin.
